Chicken-Enchiladas

Hoooooboy has being back at work today been a shock to the system. I’m trying to see the situation in a positive light, and keep reminding myself that tomorrow is Saturday. This is actually sort of a smooth transition into going back to work after a solid 10 days off.

I hope you took some time away from the ol’ interwebs over the past week. I sure did. Next week, CTK will return to its regularly scheduled programming. For now, here’s what we’re catching up on this weekend.

Everything about this WSJ article, including Mireille Guiliano, is fabulous. The author of French Woman Don’t Get Fat, whose main food groups consist of oysters, foie gras and champagne, is back again to curb fad dieting with mindful eating. As she puts it, “You have one body, and you’re responsible for it, so you have to make up your mind what you want to do with it.” Right on, Mireille.

Along the same lines, this piece from NY Mag’s The Cut highlights Jonathan Bailor and his new book, The Calorie Myth. Bailor is all about getting back to basics when it comes to food and that means dropping the calorie count. Sounds right up the CTK alley, and should make a nice addition to my reading list.

I’m not a big fan of New Year’s resolutions. Too often they can be restrictive and/or unrealistic and let’s be honest, most people stick ‘em out for two weeks before calling it quits. What I am game for, is goal setting and being intentional about the kind of year you want to have. You may know we’ve got a major lady crush on Sarah Jenks over here, and this post about crafting a meaningful 2015 hit home. So much so, that I think I’m going to try this goal setting activity with a few friends tonight over dinner.

Unleashed discovered a gem of a food blog the other day, Gimme Some Oven (love), when her friend made these chicken enchiladas. MUST. TRY.
